Preserved Lemon Paste

Our preserved lemons are the fruit of a slow lacto-fermentation process, identical to the one we apply to our olives. Over the months, this process enriches the original flavors of lemons freshly picked from our orchards. More than just decorative elements, Cayenne peppers diffuse their aromas into the salt brine. It’s this new complexity that we find in our natural preserved lemon paste.
